We spent the week at the ever fun Shumway retreate. Everyone like the burittos here is the recipie.
Café Rio Shredded Pork
3lb pork roast
1/2 cup brown sugar
1/2 cup Worcestersire sause
1/2 tsp Dried Oregano
1/2 tsp ginger
1 tsp dried Chili powder
1 tsp salt
1 tsp garlic powder
2 Tbsp minced onons
Cook all ingredients in a crock pot for 4-6 hours or until it shreds easily. Shred mea and mix in 1 small can red enchilada sauce and 1/2 cup brown sugar.I also add 2 cans drained black beans.
Dressing
1 large anahiem pepper
1tbsp water
1 clove garlic
1/2 bunch cilantro
2 tsp vinegar
2 cups Mayo
1/2 tsp salt
1/4 tsp pepper
Blend ingredients together in a blender
